Researchers know that eating food with soybeans in it can lower a person’s cholesterol. An Iowa State University study is trying to narrow down exactly which protein in the soybean makes the difference. Nutrition scientist Suzanne Hendrich says the study involves feeding volunteers muffins — some containing soy protein — and others containing milk protein.She says the subjects will eat the muffins for a month as researchers measure their cholesterol levels.Hendrich says they hope to narrow down the healthy protein in the soybeans so it can be more focused in foods.The U-S Food and Drug Administration ruled in October that foods containing soy could carry a label promoting the health benefits of soy.
