School food could boost soybean prospects

Iowa soybean growers may see a boost in their bottom lines following a U-S-D-A decision. The agency has given the go-ahead for using vegetable products as a protein source in school cafeterias. Geri Burdak, spokeswoman for the United Soybean Board, says that rule has long been a barrier.The rule change will allow schools to begin serving meat alternatives, like veggie-burgers, and soy-enhanced meat products. While the ruling is getting criticism from beef producers, Burdak says Iowa soybean growers may see a greater demand for their product.Burdak says all sorts of school cafeteria menu items can get a boost from soy products.She says the soy alternatives are healthy, low-fat and are often lower in cost as well.
