The Iowa Egg Council is trying to put a “sunny side” on recent errors made in media reports about egg safety. The erroneous report said a new federal mandate would force all restaurants nationwide to stop serving eggs sunny-side up or over-easy. The Iowa Egg Council’s director of consumer affairs, Holly Sorge says there’s no mandate, though she says there is a slight health risk associated with eating undercooked eggs for vulnerable consumers — like infants, the elderly and sick people.Sorge says if you ate a raw egg every day for 84 years, the odds are you’d get salmonella once during that time. She says eggs are the cause of food-borne illnesses in less than zero-point-five percent of the cases.Iowa is the nation’s number-one egg producer and processor.
