Students returning to classes today (Monday) at the University of Nothern Iowa in Cedar Falls will find one of their hangouts has grown. Jan Hanish is the director of U-N-I’s Mauker Union — which now includes a lot more space. She says they’ve added a lot of office space and new space for food service. Hanish says the entire project will double the size of the union by the time it’s completed in May of 2004. The expanded union follows the latest campus food trends with a new coffee bar.She says they’ll also have four new food areas, featuring Italian food, grilled food, international food, as well as sub sandwiches and salads. Hanish says it’s part of keeping up with the interest of the students.She says students are good consumers who want a choice and it’s up to the union to provide it. The new food areas and office space officially opened Friday, and work is underway on a new store. She says the retail store is the last phase, and that will be completed in May of 2004. Hanish says the work started in May of this year and the project costs 13-million dollars. Students are footing the bill in fees.
