One of the nation’s best known chefs is in central Iowa today to promote food safety. Chef Paul Prudhomme, known for his New Orleans cooking show and a line of spices, is spokesman for National Food Safety Education Month. He explains the motto for his campaign is “Be Cool, Chill Out.” Prudhomme urges Iowans to keep food refrigerated at 40 degrees or colder and to cook it at 140-degrees or hotter. Prudhomme also stresses cleanliness when cooking for yourself, your family or everyone in a banquet hall. He says you shouldn’t leave food setting out.Prudhomme is hosting a daylong series of short seminars at Mondo’s Restaurant in West Des Moines that’s open to industry professionals and the general public.
