A Minnetonka, Minnesota-based food conglomerate plans to temporarily lay off about 70 people at an egg-processing plant in southern Iowa. Michael Foods Incorporated treasurer Mark Witmer says the plant in Lenox is being partially shut down so it can be expanded.He says they’re taking out the egg-breaking operations and putting in new “pre-cooked” equipment. Witmer says the plant will experience temporary layoffs beginning in January, but he couldn’t say how long those people would be out of work. Witmer says people will be hired back as openings occur and through attrition. He says when the new segment of the factory is finished, more workers will be needed, but it’s still unclear how many. Construction is expected to begin early next year and should be complete by August. When built, the Lenox factory was the largest egg-cracking plant in North America.
